Now that we know cholesterol isn’t the real problem, EGGS ARE BACK! And I, for one, am thrilled. I could eat eggs for every meal but one of my favorite quick and easy dinners is a frittata or egg bake. And here is a new variation for you to try.  The combinations that you can create are endless so this recipe can be added to your menu every week. Savory Roasted Sweet Potatoes with Crispy Onions

If given the choice, I’d choose white potatoes over sweet potatoes any day. Most ‘sweet’ foods just don’t appeal to me. Until now… I had some sweet potatoes on my counter that needed to be used up, along with half an onion in the fridge, and well, the rest is history. The best part is that sweet potatoes are rich in beta-carotene, unlike white potatoes, which converts to Vitamin A when consumed. Vitamin A is especially beneficial for healthy vision and skin. As I write this, I’m eating the leftovers. And it’s just as good the second time! This satisfying dish comes together very quickly so it’s a great weeknight option. I’ve been searching high and low for the ultimate guilt-free pizza and no kidding, I’ve found it. It’s a low-glycemic pizza, my friends!! Low-glycemic, meaning one that won’t spike your blood sugar.
