I have something that is gonna be a lifesaver. I mean, now that school’s in session, you have about 30 seconds (okay, maaayyyybe 30 minutes) to get dinner on the table before you’re out the door to the kids’ activities. Amiright?? I make this chicken about once every other week.  Because it is easy. (Like, seriously ea-sy.) Easy Crockpot Chicken Ingredients 1 onion, chopped into 1” sections 1 whole chicken, pasture-raised Salt and pepper Optional: celery, carrots, garlic, herbs Directions Place the onion (and any optional ingredients you’d like to use) in the Continue reading Easy Crockpot Chicken and How To Use It

I love the addition of the sweet potato layer on the bottom (an idea that I found here). Make a big, green salad to go along side and you’ve got yourself a meal. Savory Roasted Sweet Potatoes with Crispy Onions

If given the choice, I’d choose white potatoes over sweet potatoes any day. Most ‘sweet’ foods just don’t appeal to me. Until now… I had some sweet potatoes on my counter that needed to be used up, along with half an onion in the fridge, and well, the rest is history. The best part is that sweet potatoes are rich in beta-carotene, unlike white potatoes, which converts to Vitamin A when consumed. Vitamin A is especially beneficial for healthy vision and skin. Here is my new favorite roasted potato recipe. And did I mention that it is SO EASY..?!! Savory Roasted Sweet Potatoes Continue reading Savory Roasted Sweet Potatoes with Crispy Onions
