Sausage, Kale and Cauliflower Soup (Low Carb and Gluten Free)

There is a great crockpot soup recipe on my FIT AND FAB Pinterest page that I’ve been wanting to try. But I forgot to put it in the crockpot and I was hungry. Like now. So, I decided to improvise and make my own version in the stock pot. It took me all of 30 minutes from start to finish and it was SO GOOD! I love the combination of ingredients, especially the addition of cauliflower. It makes the soup very hearty without the heaviness of pasta or potatoes. And with a good dose of greens and healthy fat from the coconut Continue reading Sausage, Kale and Cauliflower Soup (Low Carb and Gluten Free)

Low-Glycemic Pesto Chicken Pizza

I’ve been searching high and low for the ultimate guilt-free pizza and no kidding, I’ve found it. It’s a low-glycemic pizza, my friends!! Low-glycemic, meaning one that won’t spike your blood sugar. Because when we spike our blood sugar (over and over during the day for years on end), we become insulin resistant which is the cause of our obesity epidemic. So we want to keep it low-glycemic, people. And to do that, it’s all about the crust. I’ve tried the cauliflower crust (meh) and some of the lower carb tortillas (that you can’t get crispy unless you light them on fire). So I’m Continue reading Low-Glycemic Pesto Chicken Pizza

Golden Turmeric Milk: My Afternoon Pick-Me-Up

I love my morning coffee. And I would drink coffee all day long if I could. Unfortunately, sleep is also important to me so I have to keep the coffee to a minimum. What to do in the middle of the afternoon when tea isn’t your thing? I’ve found a new option that is comforting and healthy and hits the spot at that time when I’m ready to tear apart the cupboards looking for things I shouldn’t be eating. It includes the powerful ingredient, turmeric, which is a strong antioxidant with anti-inflammatory properties. It has been shown to lower risk of heart Continue reading Golden Turmeric Milk: My Afternoon Pick-Me-Up

The Power Of Words

The therapist said “I notice you say I don’t know a lot. Why do you think that is?” “I don’t know” I said. I still think of her every time those words come out of my mouth. I don’t know isn’t a bad answer to a question. But I was throwing it in like an er or an um. As filler or something. With almost every sentence! For example…. I’m frustrated because….I don’t know…..I don’t feel heard. I feel like I’m talking in circles….I don’t know. I don’t know….I guess that would be a fair interpretation. It might give you some clue Continue reading The Power Of Words

Getting What You Want (Part 3 of 3)

Getting what you want is simple in theory.  But if it were easy, everyone would be doing it. This third and final step is where the rubber hits the road. Or doesn’t. And I’m talking about ACTION. Hopefully you’ve written out what it is you want in the different areas of your life: relationships, money, work, health, physical environment, etc. (Part 1) And the next step was to pick the area in which you want to see change happen the most. And get into the details of your desired outcome in this area. Make sure to really envision how it would feel, taste, Continue reading Getting What You Want (Part 3 of 3)
