Weekly Recipe Roundup 9-21-17

Just to recap, all of the recipes I include must check the following boxes:

QUICK 
30 minutes or less OR can be made in the crockpot for ultimate ease. They will be completely doable on the weeknights!
EASY 
You’ll likely have most of the ingredients on hand with only a few that need to be purchased.
And of course…
HEALTHY
I will include a mix of recipes so those of you that are vegetarian/vegan will be able to find something as well as those that include meat in their diet. Either way, low-glycemic is the goal!

Here is your Weekly Roundup!

OVEN BAKED SALMON WITH PARMESAN HERB CRUST

Salmon is a gal’s best friend when it comes to quick, healthy meals. It’s simply a matter of topping your fillet with a sauce, seasoning or coating and baking in the oven for about 20 minutes. This particular parmesan coating is DELISH!

Add a salad and/or steamed vegetables and serve up this gourmet meal without breaking a sweat.

 

EGG ROLL IN A BOWL

I like using ground turkey for these to lessen the fat but either option is delicious!

This one comes together in a snap and is a one-pan meal.

ROASTED CHICKPEA GYROS

Okay, just look at that picture…is that mouth watering, or what? Another meal you can make in a pinch. And I’d serve this one with a Greek salad (see last week’s roundup for a recipe) or soup.

 

 

 

CROCKPOT MEXICAN CHICKEN SOUP

THIS ONE’S A NO-BRAINER! Toss 4 ingredients in the crock pot and turn it on…? Doesn’t get much easier than that. Oh, and it looks like a winner. I mean, who doesn’t love Mexican?!?

Serve with a side salad and/or some low-carb bread and skip the food coma. You’ll be ready to take on the rest of the evening with ease.

 

FALL SHREDDED BRUSSELS SPROUTS SALAD

I can’t try this one soon enough. Fried shallots? Gorgonzola? Sign me up.

Use a bag of pre-shredded sprouts or cabbage to make this even quicker to throw together. YUM!
