Weekly Roundup #15

I hope your 2018 is off to a great start!

Are you familiar with an Instant Pot? It’s a new pressure cooking gadget that’s all the rage these days.

Apparently you can cook chicken breasts in like 5 minutes and many other things that’ll take half the time.

Sounds like a busy mom’s dream come true, doesn’t it?!

Well, I received one for Christmas and I’ve been testing it out a bit. The jury’s still out but I’ll definitely keep you posted…

Here are some recipes that will take you 30 minutes or less! And you don’t even need an Instant Pot.

Doesn’t get much quicker than that…

Your Weekly Roundup!

If you’re a fan of pasta but not a fan of the serious carb load it provides, you may want to give this recipe a try. They are more like ramen in texture but the swap will be worth your while!

Shirataki noodles are low in carbs, gluten free, soy free, grain free and blood-sugar friendly (aka low-glycemic).

Cold salads don’t always appeal when it’s the middle of winter but this might be the exception!

A salad that’s hearty and healthy, yet tastes like a Big Mac? Sounds like a winner to me!

Fan of curry?

This looks like a big comforting bowl of vegetarian goodness. And in a yummy coconut curry sauce.

I thought this looked like the perfect post-holiday soup. And it definitely won’t be boring or bland. This one has some kick!

I don’t think this detox will make you feel one iota deprived!

Speaking of detox…are you in need of one after the holidays?
